About François Chartier
François Chartier is regarded internationally as one of the pioneering researchers in terms of recipe creation and wine and food harmonies. Robert Parker says he is “Pure genius!”, while Ferran Adriàand Juli Soler qualify him as “the number one expert on flavors”. Since winning the prestigious Best Sommelier in the World award in 1994 (Grand Prix Sopexa, Paris), François never ceased renewing himself and relentlessly pursuing his research. He published the first results of his research in *aromatic harmonies and sommelerie* – discipline he created in 2004 – in his book Papilles et Molécules (Taste buds and Molecules). In 2010, the book was awarded Best Innovative CookBook in the World, at the Gourmand World CookBook Awards in Paris.
Consultant for some of the greatest chefs in the world, including Ferran Adrià of the famous elBulli Restaurant, where he collaborated in creating many of the dishes on the 2009 and 2010 menus, Chartier’s aromatic science never ceases to turn heads. With his loyal accomplice, Chef Stéphane Modat, restaurants head chef at Fairmont Château Frontenac (Québec city), he created and hosted a series of 12 culinary television shows entitled Papilles, broadcasted on Télé-Québec in 2012. Since January 2013, the show is being broadcasted by TV5 Monde in over 125 French-speaking countries across the world. In 2011, he published the book Les Recettes de Papilles et Molécules, following suit in 2012 with the collection Papilles pour tous !, one for each season. In February 2013, the Paris Gourmand World CookBook Awards named the collection Best Matching Wine & Food Book in the World. His wine guide, Le Chartier, has become the Quebec bible of the pleasures of the table.
After twelve years weekly wine & food columns in the La Presse newspaper, and weekly videos on line at lapresse.ca and on the iPad application lapresseplus, Chartier has concluded this long-term collaboration (end of May, 2013) to dedicate his time to new endeavours.Starting in June 2013, Oscar nominee director KIM NGUYEN will begin filming the documentary The Pleasures of the Scents. Highlighting the work and passion of the famous Créateur d’harmonies François Chartier, the film will chronicle the quest that revolutionized the world of gastronomy. In the fall of 2013, Chartier will launched an innovative new WINES BRAND, created by Chartier himself, “BY and FOR” the ultimate dinning experience.
